My partner Jo-Anne and I are both fans of all things lemon. So no surprise that when we talked about doing a new cheesecake, lemon was on the top of the list. It honestly was not hard work testing this pie until we got it perfect. We tried presenting it marbled with the lemon curd swirled throughout the pie, but it did not have the big lemon pow we were looking for. Besides, this fresh curd topped cheesecake is a ball of sunshine and oh so good. So if the adage “we first eat with our eyes” is true, this pie will delight all your senses.
